I spent most of this weekend studying for my Microeconomics exam, (so much fun boring) but I did find a way to sparkle my day by making one of my very favourite Mexican dessert: sweet Quesadilla. It's really light and great for morning breakfasts!
Soo... Ready? Sift rice flour (100gr) with yeast (1 tea spoon). Beat together butter (100gr) and sugar (120gr) until the mixture becomes nice and creamy; add one egg at a time (3 eggs in total) then flour+yeast, ricotta cheese (100gr) and a sprinkle of cinnamon. Mix everything until it's smooth. Add sour cream (80gr) and grated quartirolo cheese (120gr). Stir it, put it on a baking tray and sprinkle it all around with sesame! Cook sweet Quesadilla in the oven 180° for 20-30 minutes! |
